TeXShop is a really well put together piece of software, and the best dedicated TeX/LaTeX editor for the Mac.

In some areas, it edges out infront of general code editors with support for TeX, but in other areas TeXShop can fall behind. I haven't yet settled on a preferred way to make LaTeX documents, but TeXShop is in constant rotation with emacs and TextMate for my go-to TeX editor.
